The author decided to spent every weekend for a year baking bread to find the perfect recipe for a loaf of peasant bread. Lots of information on the chemistry and history of bread, flour and yeast as well as side trips to Morocco, Paris, New Jersey and a monastery in Normandy. The final recipe is rather intimidating but the journey is worth it.
